Finding something for dinner that everyone will eat and like is usually pretty tough. Especially if Madison is home. So, since she wasn’t home tonight I thought it was a great time to try out a cajun chicken alfredo. This dinner recipe combines a few of my favorites… pasta, alfredo, chicken and smoked cajun sausage.
Ingredients You’ll Need for Cajun Chicken Alfredo
Alfredo Sauce
- 2oz Cream Cheese
- 1 stick of butter
- 1 pint of heavy cream
- 1C parmesan cheese
- Garlic powder, salt & pepper to tasts
2 Chicken Breasts
Smoked Cajun Sausage
Penne Pasta
I cooked my chicken breasts in the Instant Pot since they were frozen. Just add a cup of water and cook on manual for 14 minutes.
While the chicken breasts are cooking combine the butter, 2 oz of cream cheese and heavy whipping cream cheese and cook over medium heat until melted and combined. Bring to a boil then simmer and add parmesan cheese along with seasonings. Once the sauce is thick and coats the spoon remove from heat.
Next boil water and cook a box of penne pasta and cook smoked sausage in a frying pan with oil. Once everything was cooked, I left everything separated so the kids could top the pasta with what they wanted.
